Cupcake recipe

Another hobby I have is baking, which I hardly get to do. This was done just this week for a cousin of mine for her wedding. I realized that I really didn't like cakes that are too sweet or too greasy. So I covered the cakes with a thin layer of butter icing and the little flowers and butterfly were made using fondant paste. After a few trials and fine tuning, I came up with my own version of basic cupcake mix that works wonderfully well. Do give it a try and tell me what you think!

BASIC CUPCAKE RECIPE

Ingredients:

110 gm Self-raising Flour
90 gm Margarine
100 gm Brown sugar
25 gm Ground almonds
2 No Eggs (Medium size)
1/4 tsp Vanilla essence
2 Tbsp Milk
* optional
40 gm of chocolate chips / chopped nuts / dried fruits. I've tried chopped banana with dried cranberries. For the health conscious, try adding nut and oats for additional fiber!


1. Pre-heat oven at 160 Degrees. Before starting, make sure that all ingredients are at room temperature.
2. Cream margarine and sugar till slightly fluffy and creamy.
3. Incorporate the eggs into the mixture, one at the time, till well mixed.
4. Next. incorporate in the milk and vanilla essence.
5. Quickly fold in the flour, making sure that the flour are all mixed into the batter.
6. Pour them into the cupcake cup, about 2/3 full. Place them in the middle of the oven. Baking them at 170 Degrees for the first 5 minutes for the cakes to rise. Then lowering down to 160 Degrees for the next 10 - 15 minutes so that they do not get burned. At the end make sure that the cakes are tested to see if that they are thoroughly cooked, by inserting a toothpick in the center of the cake and comes out clean.
